SEEDY CAROB CHIP MUFFINS

Preheat oven to 350º | |
Prepare muffin tin for 12 | ||
Blend: | ||
¾ c milk (dairy, soy, nut)+ 1 t lemon juice | ||
2 eggs | ||
2 t coconut or other oil or fat | ||
Stir together: | ||
1 ¼ c whole grain flour (I like barley) | ||
1/4 c carob flour | ||
2 ½ t baking powder | ||
½ c wheat germ (opt) | ||
¼ c each: flax, sesame and sunflower | ||
¼ c carob chips | ||
½ t salt | ||
¼ c zylitol or 1/2-1 t stevia | ||
½-1 t cinnamon | ||
Mix wet and dry ingredients well and spoon into muffin tins | ||
Bake 25 minutes |
