SIMPLE PANCAKES

In blender or mixing bowl: | ||
1 c water | |||
1 egg | |||
1 banana | |||
2 T oil , butter or veg spread | |||
1/4 c nuts | |||
1 T baking powder | |||
1/2 t salt | |||
1 1/4 c whole grain flour | |||
Blend all ingredients except flour and baking powder until smooth. Add flour and baking powder and blend until mixed. Let sit a coupe of minutes. Pour onto a medium hot greased griddle and cook slowly until bubbles appear on surface then flip and cook till done. Makes 4 medium pancakes. |

May substitute 2 T coconut oil and/or 1 c coconut milk for a richer pancake | |||
