SORGHUM BANANA CAKE

Preheat oven 350 | ||
In blender : | |||
4 oz water | |||
2 bananas, ripe | |||
2 T oil | |||
1/2 t salt | |||
1/2 - 1 t cinnamon | |||
Blend till smooth. | |||
In a bowl put: | |||
1 c sorghum flour | |||
1 t baking powder | |||
1 t baking soda | |||
Add wet mixture to dry and stir quickly. | |||
Put half the mixture into a 7 x 11 inch baking dish. | |||
Pour on 1 - 1 1/2 c fruit of your choice. | |||
Spread on the other half of mix. | |||
Bake for 40 minutes |
