Tofu can be marinated in any of your favorite sauces and baked at 250 for 2 hours for a low fat protein source
Drain and wrap in towel to get out excess moisture:
1 # tofu
Take any blackened meat or fish seasoning and mix with olive oil to make a paste or use the Chinese 5 Star paste (below).
Slice tofu and spread the above onto slices and place in baking dish. May cut into cubes
Either marinate overnight or at least 1 hour in refrigerator
Bake at 375 approx 30 minutes.
OR for a chewier, firmer version bake at 250 for 2 hours

Chinese 5 Star paste:
1 Chinese 5 spice
3 T olive oil
1/2 t salt
1/16 t stevia
