CASHEW CHICKEN

Preheat oven 350 degrees | |||
In mixing bowl combine: | ||||
1 pound boneless, skinless chicken breasts, cut into 1 inch cubes | ||||
1 med. onion, chopped | ||||
2 cups fresh broccoli pieces | ||||
2 cups boiling vegetable broth | ||||
1 cup uncooked brown rice | ||||
2 Tbsp. Bragg's Aminos (or 2 t salt) | ||||
1 tsp. ground ginger | ||||
pepper to taste | ||||
3/4 cup raw cashews | ||||
Transfer to 7x11" baking dish or 2 quart casserole. | ||||
Cover and bake 45 minutes - 1 hour. | ||||
May make it early and bake it later. Mix everything but the broth, transfer it to baking dish and refrigerate. When ready to bake, pour the broth over it and bake. | ||||
