CREAM OF VEGGIES OVER RICE

Open to many different veggie/meat combinations and herbs
Preheat oven to 350º
Cook approx 45 minutes:
1 c dry brown rice
2 c water
1/2 t salt
Saute:
2 carrots, sliced
1 onion, cut into chunks
1 red pepper, cut into chunks
2 T sesame or other oil
1/2 c almonds, walnuts or tofu chopped
Blend:
1 1/2 c broth or water
1/2 c cashews
1- 1 1/2 t seasoning salt
1/4 t garlic granules
herbs of your choice
Spoon rice into bottom of 7x11 in baking dish
Spoon veggies over rice
Add 1 c frozen peas over veggies
Pour blended liquid over rice and veggies
Bake approx. 30 minutes
