CREAM OF VEGGIES OVER RICE

Preheat oven to 350º | |
Cook approx 45 minutes: | ||
1 c dry brown rice | ||
2 c water | ||
1/2 t salt | ||
Saute: | ||
2 carrots, sliced | ||
1 onion, cut into chunks | ||
1 red pepper, cut into chunks | ||
2 T sesame or other oil | ||
1/2 c almonds, walnuts or tofu chopped | ||
Blend: | ||
1 1/2 c broth or water | ||
1/2 c cashews | ||
1- 1 1/2 t seasoning salt | ||
1/4 t garlic granules | ||
herbs of your choice | ||
Spoon rice into bottom of 7x11 in baking dish | ||
Spoon veggies over rice | ||
Add 1 c frozen peas over veggies | ||
Pour blended liquid over rice and veggies | ||
Bake approx. 30 minutes |
