Fish and Zucchini

Preheat oven 375 degrees | |||
|
Coat baking dish with olive oil |
||
Cover the bottom with approx 2# white fish | |||
Sprinkle with salt and herbs of your choice |
|||
Drizzle with lemon juice |
|||
Top with 2-3 med shredded zucchini and 1 small sliced onion |
|||
Sprinkle with the same herbs and salt as above | |||
Top with small bits of butter or drizzle with sesame/olive oil. |

Cover with foil and bake for approximately 40 - 50 min | |||
A doctor recently made an adaptation to the above which sounded easy and quick:
Instead of shredding the zucchini, I cut it in thin slices, I layered the zucchini with the onion on the bottom of the crockpot, sprinkled it with salt and herbs, laid the fish on top of the vegetables, added more salt, herbs and a little melted butter. I cooked it for 5-6 hours on low and it was ready to eat.
