INDIAN STYLE NO-TOMATO BHAJI

In wok or skillet saute: | ||
1 med onion, chopped | |||
1-2 cloves garlic, pressed or chopped | |||
1-2 T fresh minced ginger | |||
1-2 T oil | |||
Cook till soft then add: | |||
2-3 stalks celery, chopped | |||
1 carrot , chopped | |||
1/2 small cabbage, chopped | |||
1 bag, 8 oz frozen green beans | |||
1 sweet potato, chopped (white sweet potato works well) -can add cooked sweet potato | |||
When almost soft add: | |||
1/2-1 t salt to taste | |||
1 t garam masala | |||
3/4 t coriander | |||
1/2 t cumin | |||
1/4 t turmeric | |||
black pepper to taste | |||
Add 1-2 c No_tomato sauce and simmer a few minutes to blend seasoning | |||
Can top with fresh cilantro |
