QUICK LENTIL PATTIES

These patties are especially nice with tomato or no-tomato sauce or nut gravy.
Preheat oven 375
Cook till soft:
1 med potato (or oriental sweet potato which is drier over others)
1 c dry lentils
1 small onion
1 1/2 c water
Blend above with below ingredients:
1/2 c chopped walnuts or other chopped nuts or seed
1/2 t sage or 1 t cumin and 1 t ginger powder
1 t salt
1/4 t garlic powder
1 T oil
1/3-1/2 c flour (non gluten sorghum or wheat) OR 1 egg and 1/4 c flour (non gluten sorghum or wheat)
You may use a potato masher to blend the first 4 ingredients.
Cool before shaping into patties and fry in small amount of oil approximately 4 minutes per side or bake on oiled cookie sheet for 30 minutes in 375 degree oven
