Quinoa Bake

In 1 qt saucepan:
|
||
2 c chicken or vegetable broth
|
|||
1 c quinoa
|
|||
2 stalks celery
|
|||
2 small or 1 med onion, chopped
|
|||
2 T seasoning salt or 1/2 t salt and herbs of your choice (fresh dill is nice)
|
|||
black pepper to taste
|
|||
1/2 c raw almonds or cashews (optional)
|
|||
2 t oil to help prevent sticking and boiling over
|
|||
canned artichokes (optional) | |||
Bring to a boil and simmer 25 minutes or bake in a 350 degree oven for 35-45 minutes. |
