VEGETARIAN CHILI

|
Soak beans overnight or put into pressure cooker and cook till soft: | |||
3-4 cups of dried pinto beans | ||||
1-3/4 cup brown rice or buckwheat | ||||
Sauté | ||||
1 large onion and | ||||
1Tbs minced garlic | ||||
2 T olive oil | ||||
Add all of the above into a large pot and simmer for 20 minutes with: | ||||
2-3 Tbs of chili powder | ||||
1-2 qt. jars of canned tomatoes | ||||
salt to taste | ||||
You may exchange grain for tofu, sauted with the onion and garlic | ||||
