Mango Salsa

1 large mango, cut into small pieces
1/4 c fresh chives
1/4 c minced cilantro, packed tightly
1/2 c celery, minced
1/2 c cucumber. finely chopped
1/2 red apple, finely chopped
1/4 t salt
2-3T lemon juice
Generous sprinkling of freshly ground black and pink peppercorns
1 T fresh ginger, finely grated
Mix all together well and allow to marinate a few hours or overnight in
refrigerator.
