NO-TOMATO SAUCE

In a pressure cooker or large pot place: | |
4 # carrots, cut into chunks, | ||
2 med-large beets, cut into chunks | ||
3 c vegetable, chicken, or beef broth or plain water | ||
In pressure cooker bring to pressure and cook 10 minutes then let cool down before opening. If in pot, cook till veggies are soft | ||
Add and blend | ||
1/2 - 3/4 c olive oil | ||
6 T lemon juice | ||
For Indian Sauce add: | 1 t salt | |
1 c sauce |
If allowed: 1 T miso paste per quart of sauce will give a hearty flavor.

3/4 t garam masala | ||
1/4 t cumin | ||
3/4 t cardamon | ||
1/8 t tumeric | ||
salt and black pepper to taste | ||
For Italian Sauce add: | ||
4 c sauce | ||
1/4 t oregano | ||
1/2 t basil | ||
1/4 t garlic powder or 1 t fresh minced | ||
Salt and pepper to taste |
