BUFFALO STEW WITH SWEET POTATOES

Preheat oven to 350

Black Pepper will add some heat
In a 2 qt saucepan or larger saute:
2 lb ground buffalo meat
1 1/2 large onion, chopped
2 T olive oil
When meat is sightly brown add and mix:
1/4 t cumin
1/2 t turmeric
1/4 t ginger
1 T fresh parsley
1 T fresh cilantro
1/2 t salt
salt and pepper to taste
1/2 c water
Add the above to a baking dish then on top place:
2 med sweet potatoes, cut into slices
Cover with foil and bake 40 minutes, then increase oven temp to 425, remove foil and bake till sweet potatoes are soft and brown on top

Alternately, add an additional 2 quarts of water and bake in a pot on the oven until sweet potatoes are cooked through to make a soup.
