CHILLED PEA SOUP

In blender blend: | ||
1 t fresh tarragon, rosemary or mint | |||
2 t vegetable salt (I like the original Herbamare - no solanines) | |||
1 1/2 c water | |||
1/2 c raw cashews

1 T oil of your choice | |||
Blend till creamy then add: | |||
1 c water | |||
1 # frozen peas, thawed | |||
Blend till smooth and a nice green color. | |||
May top with 2 scallions, cut fine.
