INDIAN CREAMED SPINACH

Blend till creamy: | ||
1 1/4 cups water | |||
1 cup cashews | |||
1/4 c lemon juice | |||
Saute: | |||
2 T coconut oil (may use another oil) | |||
1/2 large onion, chopped | |||
2 cloves garlic, minced | |||
3/4 t cumin | |||
3/4 t coriander | |||
1 t garam masala | |||
3/4 t salt | |||
When onion is soft add and continue to cook: | |||
2 # frozen spinach (thawed) or 2 bunches fresh | |||
1-2 T ginger, freshly grated | |||
Stir in cashew cream from above, cook another 5 mintues till blended well. Adjust seasonings. | |||
