May try cocoa and unsweetened chocolate chips for carob
Preheat oven to 350º
Prepare muffin tin for 12
¾ c milk (dairy, soy, nut)+ 1 t lemon juice
2 eggs
2 t coconut or other oil or fat
Stir together:
1 ¼ c whole grain flour (I like barley)
1/4 c carob flour
2 ½ t baking powder
½ c wheat germ (opt)
¼ c each: flax, sesame and sunflower
¼ c carob chips
½ t salt
¼ c zylitol or 1/2-1 t stevia
½-1 t cinnamon
Mix wet and dry ingredients well and spoon into muffin tins
Bake 25 minutes
