Great with unsweetened applesauce or blended fruit
In blender or mixing bowl:
1 c water
1 egg
1 banana
2 T oil , butter or veg spread
1/4 c nuts
1 T baking powder
1/2 t salt
1 1/4 c whole grain flour
Blend all ingredients except flour and baking powder until smooth.
Add flour and baking powder and blend until mixed.
Let sit a coupe of minutes.
Pour onto a medium hot greased griddle and cook slowly until bubbles appear on surface then flip and cook till done.
Makes 4 medium pancakes.
May substitute 2 T coconut oil and/or 1 c coconut milk for a richer pancake
