In a small bowl mix together:
1/4 c raisins
1/3 c sliced almonds or any nuts
1/4 c coconut shreds (can be interchanged with other fruits and/or nuts and/or seeds)
In a small saucepan (I like to spray the pot with PAM or equivalent) you add:
1/4 c coconut oil
1/4 c carob powder
1 pack coconut paste
Dissolve, mix this well and bring to a simmer until everything mixes together (no longer than one minute). Stir almost constantly.
Mix in:
1 t vanilla
1 packet stevia
Pour the nuts and dried fruit into the pot. Mix well. Pour into a shallow pan in a layer about 1/2" thick and stick in freezer for 30 minutes then cut into pieces and put into fridge. Must keep cold to harden.
If you let it harden in freezer for longer it is very hard to cut into pieces.
