Carob Fudge

In a food processor pulse:
12-14 med-large dates, fresh
1/3 c carob powder
Add a small amt of water if dates are dry
When thoroughly blended add:
1 c peanut or other natural nut butter
1 t vanilla
Blend till thick:
Mix in 3/4 c walnuts or coconut, optional
Either spread in pan or roll in balls
