Great low fat, whole grain cookie. Can be made with barley or wheat flour.
Preheat oven to 350º
2 ripe bananas
½ t salt
3 oz water
1/2 c p-nut butter, or other nut butter
1 T vanilla
2 packages stevia
Stir together:
1 c sorghum or chestnut flour flour
1/2 c carob or cocoa powder
1/2 T baking powder
1/4 c unsweetened carob or chocolate chips, optional
1/4 c nuts or seed, optional
Mix wet and dry ingredients well and drop onto prepared cookie sheet
Bake 20 minutes
You can also substitute various nut/seed butters for peanut butter and then add 1 t of another flavoring such as mint or orange
