May substitute almond butter and use almond milk for another variation.
Preheat oven 350
2 c. cooked brown rice
2 c shredded carrots (3 carrots)
1/2 c onions, chopped (1 small)
1-2 stalks celery, chopped
1/3 c peanut butter
2 c milk, nut, soy, rice or dairy
1 1/2 t salt
1/2 t thyme or 1 t poultry seasoning
1 t onion powder
1/2 t garlic powder.
1-2 slices bread or 1/2 c breadcrumbs, (can be gluten free), optional
Mix both together
Spoon into a 2 qt covered casserole and bake 45 min
