Quinoa Bake

In 1 qt saucepan:
2 c chicken or vegetable broth
1 c quinoa
2 stalks celery
2 small or 1 med onion, chopped
2 T seasoning salt or 1/2 t salt and herbs of your choice (fresh dill is nice)
black pepper to taste
1/2 c raw almonds or cashews (optional)
2 t oil to help prevent sticking and boiling over
canned artichokes (optional)
Bring to a boil and simmer 25 minutes or bake in a 350 degree oven for 35-45 minutes.
