This is also good cold and lends itself to Italian herbs.
Preheat oven 350°
3 no-chicken, chicken or vegetable stock
½ c raw almonds or cashews
1 t salt plus 1 t herbs of your choice OR 2 t vegetable salt
black pepper to taste
Stir into the above:
6-8 oz of chopped green or black olives, drained and chopped
2 stalks celery, chopped
1 c millet, quinoa or other quick cooking grain
½ onion, chopped
Place in baking bowl and bake 350 for 35-45 minutes
