VEGETARIAN CHILI

Soak beans overnight or put into pressure cooker and cook till soft:
3-4 cups of dried pinto beans
1-3/4 cup brown rice or buckwheat
Sauté
1 large onion and
1Tbs minced garlic
2 T olive oil
Add all of the above into a large pot and simmer for 20 minutes with:
2-3 Tbs of chili powder
1-2 qt. jars of canned tomatoes
salt to taste
You may exchange grain for tofu, sauted with the onion and garlic
