CASHEW OLIVE SPREAD

Great on celery, crackers, rice cakes, etc.
In food processor blend till creamy:
1/2 c cashews, raw
1/2 # tofu (silken or firm)
8 T juice from bottle of green olives
2 - 2 1/2 T ume plum vinegar or lemon juice or vinegar
Stir in:
1/2 c chopped green olives (I use the canned Santa Barbara Olive Co)
1 t dill weed (optional)
May also add chopped celery.
