Use mixture in enchiladas, lasagna or as a replacement for ricotta cheese in a quiche.
In saucepan cook till rice and onion are soft, approx 45 min:
1 large onion, whole
1/2 c dry brown rice
1 c water
In food processor blend till creamy:
1# tofu (drained), soft
Cooked brown rice (warm) along with onion
2 T tahini (sesame seed butter) or olive oil
1 t salt or 2 t umeboshi plum paste
1 T lemon juice (optional for tartness)
May need to add water but should be relatively thick
Adjust salt or umeboshi paste
