In a pressure cooker or large pot place:
4 # carrots, cut into chunks,
2 med-large beets, cut into chunks
3 c vegetable, chicken, or beef broth or plain water
In pressure cooker bring to pressure and cook 10 minutes then let cool down before opening. If in pot, cook till veggies are soft
Add and blend
1/2 - 3/4 c olive oil
6 T lemon juice
For Indian Sauce add: 1 t salt
1 c sauce
If allowed: 1 T miso paste per quart of sauce will give a hearty flavor.
3/4 t garam masala
1/4 t cumin
3/4 t cardamon
1/8 t tumeric
salt and black pepper to taste

For Italian Sauce add:
4 c sauce
1/4 t oregano
1/2 t basil
1/4 t garlic powder or 1 t fresh minced
Salt and pepper to taste
