INDIAN CREAMED SPINACH

(VEGAN PALAK)

Nice with meatballs
Blend till creamy:
1 1/4 cups water
1 cup cashews
1/4 c lemon juice
Saute:
2 T coconut oil (may use another oil)
1/2 large onion, chopped
2 cloves garlic, minced
3/4 t cumin
3/4 t coriander
1 t garam masala
3/4 t salt
When onion is soft add and continue to cook:
2 # frozen spinach (thawed) or 2 bunches fresh
1-2 T ginger, freshly grated
Stir in cashew cream from above, cook another 5 mintues till blended well. Adjust seasonings.
